Cut the wafer paper in half. Zest the lemon and squeeze out the juice.
Blend the prunes, hazelnuts, lemon juice and zest to form a sticky mass. Fold in the oats.
Spread the paste over one of the wafer paper halves, place the remaining wafer half on top, and press down. With a sharp knife, cut into 4 equal pieces and leave at room temperature, uncovered, to dry overnight.
Store in a tightly-sealed container for up to a week at room temperature. (Expect the paper to soften).
1 rectangular sheet edible wafer paper / rice paper for baking (about 5 x 8 in / 120 x 200 mm)

100 g / 2/3 cup Prune Bits
50 g / 1/3 cup flaked hazelnuts or sliced almonds
20 g / 1/4 cup rolled oats
