These lightly baked energy balls are a healthy, or sweet treat for morning or afternoon snacking.
Preheat the oven to 350F (180C). Line a baking tray with parchment paper.
Soak the prune bits in the water for 5 minutes, then blend until smooth.
In a stand mixer with the paddle attachment, beat the eggs together with the butter and cheese until creamy.
In a bowl, mix the coconut flour, instant coffee granules, prune puree, and baking powder together. Fold into the egg mixture. Let rest for about 10 minutes.
Spread the coconut flakes on a plate. With moistened hands (to prevent the mixture from sticking), form into 12 small balls. Roll the balls in the coconut until completely covered. Bake for 15-20 minutes or until the coconut is lightly browned. Once cool, store energy balls in the refrigerator for up to 5 days or freeze.

50 g low-fat quark or cream cheese
50 g / 1/3 cup coconut flour
