Juicy watermelon with tangy feta makes a perfect summer salad. Diced prunes and arugula adds layers of texture and sweetness. For a rounder flavor, add a splash of fresh plum concentrate to the salad dressing.

Instructions

    To make the salad dressing, whisk together lemon juice, oregano, salt, pepper, plum concentrate, and olive oil. Stir in the onion to coat.

    In a salad bowl, combine the garlic, mint, prunes and arugula. Add the dressing and onion and gently mix, then mix in the watermelon. Sprinkle feta on top and serve immediately.

1 small garlic clove, minced (optional)

Leaves from 1 sprig fresh mint, stemmed and sliced

75-100 g / 1/2 cup Diced Prunes

125 g / 6 cups baby arugula

3 cups / 300 g seedless red watermelon cut into cubes

200 g / 3/4 cup crumpled feta cheese
