Preheat the oven to 325F [165C]. Line a rimmed baking sheet with parchment paper and lightly coat with nonstick spray.
In a small saucepan over medium heat, bring the concentrate and honey to a simmer.
In a large bowl, mix together the oats, flax seed, cinnamon, and salt. Pour in the concentrate-honey blend and stir well.
Spread the oats onto the baking sheet and bake for 15 minutes, stirring once or twice. Lower the temperature to 300F [150C].
In a bowl, mix together the nuts and seeds. Stir the nuts and seeds into the oats and bake, stirring once or twice, for 15-20 more minutes or until the edges are deep brown and the center is golden brown.
Remove from the oven, stir in the cranberries and let cool completely. The granola will crisp as it cools. Store in an air-tight container.
